Ingredients:
1 large carrot, peeled & roughly chopped
1 shallot, peeled & roughly chopped
2 tablespoons roughly chopped fresh ginger
1 tablespoon sweet white miso
2 tablespoons rice wine vinegar
1 tablespoon toasted sesame oil
1/4 cup grapeseed oil
2 tablespoons water
Directions:
Pulse the carrot, shallot & ginger in the bowl of a food processor until finely chopped. Scrape down the sides, add the miso, vinegar & sesame oil & blend. With the food processor running, slowly drizzle in the grapeseed oil & water.
